My guess that the NT Greek use of "to know" is from Hebrew is confirmed by the OED which says the usage in English is a Hebraism:

"7. trans. To have carnal acquaintance or sexual intercourse with. arch.

  Chiefly a Hebraism which has passed into the mod. langs., but found also in Gr. and L. So Ger. erkennen, F. connaître.

c1200 ORMIN 2406 {Ygh}ho..se{ygh}{ygh}de; Hu ma{ygh}{ygh} {th}iss for{th}edd ben {th}urrh me {Th}att nan weppmann ne cnawe?  1382 WYCLIF Gen. iv. 1 Adam forsothe knewe Eue his wijf. 1535 JOYE Apol. Tindale (Arb.) 48 Before she knew (that is) slept with hir howsbonde.  1601 SHAKES. All's Well V. iii. 288 By Ioue, if euer I knew man, 'twas you. 1603 {emem} Meas. for M. V. i. 203 That is Angelo, Who thinkes he knowes, that he nere knew my body."

I notice that the woman as well as the man can be the active subject of the verb.

erkennen and connaître have the same meaning.

IIRC, Matthew is the most 'Jewish' of the four gospels, so this all makes sense.

I tried looking up a passage in the OT where "Adam knew Eve".  I have no Hebrew, but the Greek OT, Septuagint, which pre-dates Christ, seemed to use know in that case as well.  And as hh says, scholars reckon Matthew was being deliberately Jewish.

...or writing in Hebrew and then translating it as directly as possible into Greek, rather like a translation using a thesaurus!
