Anty, you do indeed get points.

But that's COMPLETELY WRONG!  Cheesy

I could mention, I suppose, that I've already let a clue slip, somewhere way back...  Wink

Vaughan Williams - The Field of Mustard or could it be Bitter Springs?
MacDowell - With Sweet Lavender

VW (Bitter Springs) and MacDowell are CORRECT!

I'll leave you to mop up, IGI and pals. To bed now, and not around tomorrow. You'll enjoy the Mengelberg  Wink

Try ...

Havergal Brian
David Lang and
Randall Thompson (for a double whammy)

...as well.

I'm not quite there yet, but:

Vaughan Williams - Bitter Springs
Haydn – The best I can do is suggest Haydn Piano Sonatas played by Thomas Sauer(!)
Misha Mengelberg – Salz
William Lawes - Sweet Echo, sweetest nymph that liv'st unseen (amongst others)
MacDowell - With Sweet Lavender
Bingham - Salt in the blood
Havergal Brian - How sweet is the Shepherd's sweet lot!
David Lang – Bitter Herbs
Randall Thompson – Sweet and Sour Nursery Rhymes

Two others which may have made the subs' bench...

Gerald Barry - The Bitter Tears of Petra von Kant
Puccini – ‘Sour’ Angelica!   Wink

Very good, IGI! Some of those will do just as well as mine; but, at the risk of introducing a sour note, the Mengelberg and Haydn need another tweak! Catch ya later  Wink

Has anyone written a piece about umami?

But of course. I'm surprised BBM hasn't mentioned it.

Mozart: 'Tuba mirum' (A Military Band arrangement by Gordon Cherry)

and in a forthcoming biography of Messiaen which will reveal his previously unknown affaire de coeur with Ms Thurman (or Theremin as she then was) there's a facsimile showing a change of title to cover up his tracks:

Messiaen: Poemes pour UmaMi

Ollie,  Cheesy

Ok, this is solved, to all intents and purposes. Well done, IGI!!  Smiley

What I had was:

RVW: Bitter Springs
David Lang: Bitter Herb
Randall Thompson: Bitter-Sweet

Haydn: Sweet melody of North Wales (  Shocked )
MacDowell: With Sweet Lavender
Brian: The Sweetest Dream

Bimgham: Salt in the blood
William Lawes: These Salt Rivers of Mine Eyes

Mengelberg: Some Experienced Sea-Chickens Against a Backdrop of Ambassadors for Sour Cream  Shocked Shocked Shocked Cheesy

Anything vaguely horticultural, Iggers?

Rodrigo - Musica para un Jardin
Debussy - Jardins sue la Pluie
Delius - In a Summer Garden
Dove - Figures in the Garden

Now, I said it was easier, but you weren't supposed to get it that quickly!!! Well done, Marters - a clean sweep!  Cheesy
I listened to De Falla's Noches en los jardines de España walking into work this morning, which got me thinking of that connection. I remember hearing the Dove, possibly on a Proms broadcast; pity it's doesn't appear to have been issued on disc, as I rather enjoyed it. I think it was paired with the Mozart Gran Partita in a late night concert.
