There were no wilted leaves in my salad, just lots of roots and fruits - including beetroot. I bought a large packet of cooked beetroot on Friday, as I suddenly fancied some, but there was far too much. As a result I've been eating lots of beetroot. And it does have the unfortunate side-effect of turning ones wee red Shocked The first time this happened to me, I was quite worried but I expect it now. I used to grow lots of beetroot - my favourite way of preparing it was to grate it raw, maybe add a little dressing and some chopped spring onions. The ones I bought were soaked in vinegar which is nowhere near as nice - beetroot doesn't need vinegar, it's actually quite sweet. I'm sure I remember seeing a recipe for curried beetroot somewhere but maybe I'm just imagining it?

Just to report that, after all that, I didn't get to cook Mort's Moishe Lamb this weekend after all. Couldn't get the right cut since the local butcher (this is WALES, look you!) is just too naff.

WHAT!! All them sheeps roaming around the Valleys and not a scrag to be found among them??  We do say it's a bloomin' disgrace!

This recipe is from Madhur Jaffrey’s Eastern Vegetarian Cooking

So that's where I'd seen it! I think you've got that book as well haven't you Anty? Never tried that recipe though.

I was stroking one of the cats today and marvelling at how lovable carnivores can be - but there are notable exceptions! Tongue Tongue

I didn't realise that the beetroot was so versatile!

From the same blog as the beetroot curry:

Vegan chocolate & beetroot cake with spiced beetroot glaze

I've got to say that does sound...er...unusual? However there's no reason why you can't use beetroots as a sweet ingredient in cakes in the same way as carrots are used.
