Haydn's La Poule Symphony? It's normally translated as 'The Hen' isn't it, but I can't see why it couldn't be 'The Chicken'. For the post-concert buffet.... Papa Haydn's Chicken Salad with Peanut Sauce
Makes 3 to 4 servings
2 pounds chicken breast 10 cloves garlic, peeled 2/3 bunch fresh cilantro 1/2 cup unsalted crunchy peanut butter 1/2 cup soy sauce 5 TBL granulated sugar 1/2 tsp. dry sherry 1 TBL hot chili oil.
Poach chicken breasts for 20 minutes. Cool, skin and debone. Cut in julienned strips and place on individual beds of lettuce. In food processor, mince garlic and cilantro, add peanut butter, soy, sugar, sherry and hot oil. Process until smooth (yields about 1-3/4 cups). Serve on the side of the chicken breasts.

Ian's already dismissed this one, George. (sadly) The recipe looks tasty, however! So, we're looking for a Haydn chicken (which might just be part of an album cover/title), then we can go to bed!

Will remember the recipe, but no - it's the name of an album of Haydn, I think (I can't find the work on Grove)
